Ingredients
- Potatoes — 300 g
- Salt — 0.5 tsp
- Herbes de Provence — 0.5 tsp
- Red pepper flakes — 0.5 tsp
- Cheddar cheese — 60 g
- Eggs — 2 pcs
- Green onions
- Parsley
- Olive oil for frying
Steps
- Peel the potatoes and grate them on the large side of a grater; place in a clean cloth or towel and squeeze out excess moisture.
- Grate the cheddar cheese; finely chop the green onions and parsley.
- In a large bowl, combine the squeezed grated potatoes with the eggs, grated cheddar, salt, Herbes de Provence, red pepper flakes, green onions, and parsley until uniform.
- Heat the olive oil in a skillet over medium heat. Shape the potato mixture into small flat patties and place them in the skillet in a single layer.
- Fry the patties over medium heat until a golden, crispy crust forms on both sides and the cheese inside has melted; cover the skillet briefly if needed to speed up the cheese melting.
- Transfer the finished patties to paper towels, let them cool slightly, and serve hot.
