White Acacia Kvass

Refreshing homemade white acacia kvass with natural carbonation, no yeast or preservatives, and a light honey note.

Ingredients

  • White acacia blossoms — 15 pcs
  • Water — 2700 ml
  • Sugar — 200 g
  • Lemon — 0.5 pcs

Steps

  1. Pour 2700 ml of water into a pot and add 200 g of sugar; bring to a boil, reduce the heat and simmer, stirring, until the sugar is completely dissolved, then remove from the heat and let cool to about 30 °C.
  2. Prepare the acacia blossoms: shake off any small debris, remove leaves and tough stems.
  3. Place the prepared acacia blossoms and pieces of half a lemon into a clean three-liter jar, then pour the cooled syrup over them so that the flowers are covered.
  4. Cover the jar opening with cheesecloth or a thin cloth and place in a warm, dark place to ferment for 4-5 days, checking for carbonation and taste.
  5. Strain the finished kvass through a sieve or cheesecloth, pour into individual bottles and chill in the refrigerator; keep cold and consume chilled.
