Fumé sauce

Fumé is a sauce for pasta, typical of central Italy. It is intended to be used in great amounts.

Ingredients

  • milk cream — 200 g
  • tomato sauce — 150 g
  • pancetta — 100 g
  • olive oil
  • onion
  • paprica
  • parsley (optional)

Steps

  1. Cut onion to small pieces and pancetta to cubes about 1 cm long.
  2. Fry them on low fire until onion darkens.
  3. Add milk cream and tomato sauce and stir.
  4. Add a small pinch of sugar, then season with salt and paprica.
  5. Cook stirring slowly on low fire for 10 minutes or until the sauce thickens.
